Kettle Sour pH Change Post Boil
Not sure if this is a fluke or to be expected. I've done a few Berliner Weisses over the years and just transferred my latest iteration to the fermenter where it will get a dose of raspberry puree for a secondary fermentation. I use straight Lacto Plantarum from capsules for kettle souring, and inoc...

I never fuss with chalk either, but with the higher carbonation of Topo Chico, might the chalk then dissolve into solution?

US-05 Ferm Temp - Pale Ale
What temperature do you ferment US-05 at when brewing a pale ale? I've got 65 down in my recipe, but curious what others do.

Re: Sauerkraut from North Brewer
Very easy to do. I've done it a few times and the sauerkraut at the Oktoberfest party was homemade. I've just started up my first pepper garden with Thai, cayenne, and giant jalapeno. Planning to do some fermented pepper sauce with the Thai and cayenne and pickling the jalapenos. I do wonder how man...

Re: Water
Ideally, know where your water originates from. Your report is Wylie's treatment plant, but there are others along with other water districts. I also happen to get my water from Wylie's treatment plant and if you are in the DFW area AND on NTMWD water, this is the likely source. I use RO water and a...

Re: Splitting the brew day
As an aside, some of these exBEERiments should be taken with a grain of salt. However, this overnight mash has pretty predictable results like higher pre-boil gravity and lower final, indicating there was better extraction and fermentability over time. The lack of head retention, unless there is som...

Re: Splitting the brew day
Have you read this: https://brulosophy.com/2018/01/08/mash-length-overnight-vs-60-minutes-exbeeriment-results/ ? I have not had a reason yet to go to this extreme, but I think if I had to, it would be at the mash/conversion phase and not post-mash where the wort just sits. The exBEERiment referenced...

very cool! I wonder how well it would hold up vs a freezer using a temp controller, or is it just your standard freezer with a different temp controller with a different temp range?

I need to experiment with aromatic. Maybe you’re not adding enough immersion chiller though.

Re: What's your next Brew and what is different about it?
I fermented at 67. Slight underpitch on the yeast(WLP300) at about 83%. Funny, I usually get heavy blowoff from WLP300, but this time it really didn't do much at all. The starter did a little and the krausen was massive. Yet, it went from 1.047 to 1.014 in about 3 days and down to 1.013 within a week.

Never have gotten what I want from a Weisse. Latest is a Dunkel Weisse that isn’t expressing the banana like I want. Did a protein rest at around 118 and mashed at 152. Liking the body though. Will be at the fall party as well.

Re: Fermzilla on Wheels and Cleaning
I've gotten some great ideas from homebrew finds. Great idea. Speaking of wheels, I hated my Blichmann tower of power not having wheels. Having to awkwardly carry it around has always been a pain. I can see why they don't offer them since it is fairly top-heavy. I found some 3" locking casters ...

Re: 2022 Labor of Love
Depends on who we work with in the future if we wanted to pursue it/own it. I think people liked the Deep Ellum LoL, and the C&G event seemed well received by the attendees. As an entrant like Walter, I would have been disappointed. They were used to get people down there without much support. W...

Re: Kill Limbo Ciders and Seltzers Medal Category
I too am in favor of dropping cider and seltzer. Seltzer more so than cider since cider and mead are part of BJCP. Seltzer seems to have run its course.
