Cool poll. I put down "Other" because I primarily use Beersmith, but also Brewers Friend(Braukaiser). I believe Beersmith is Chris White, but not sure. Might consider that as an option as well as multi-select, if that is possible.

I never fuss with chalk either, but with the higher carbonation of Topo Chico, might the chalk then dissolve into solution?

Ideally, know where your water originates from. Your report is Wylie's treatment plant, but there are others along with other water districts. As an aside, some of these exBEERiments should be taken with a grain of salt. However, this overnight mash has pretty predictable results like higher pre-boil gravity and lower final, indicating there was better extraction and fermentability over time. I fermented at 67. Slight underpitch on the yeast(WLP300) at about 83%. Funny, I usually get heavy blowoff from WLP300, but this time it really didn't do much at all. The starter did a little and the krausen was massive. Yet, it went from 1.047 to 1.014 in about 3 days and down to 1.013 within a week.

Never have gotten what I want from a Weisse. Latest is a Dunkel Weisse that isn’t expressing the banana like I want. Did a protein rest at around 118 and mashed at 152. Liking the body though. Will be at the fall party as well.
