Sauerkraut from North Brewer

Very easy to do. I've done it a few times and the sauerkraut at the Oktoberfest party was homemade. I've just started up my first pepper garden with Thai, cayenne, and giant jalapeno. Planning to do some fermented pepper sauce with the Thai and cayenne and pickling the jalapenos.
I do wonder how many of us also get into fermentation and pickling?
